Ingredients:
For the caramel and fruit layer:
- 4-5 blood oranges
- 1 cup granulated sugar
- 1/4 cup water
For the cake batter:
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- Prepare the caramel and fruit layer:
- In a saucepan, combine the granulated sugar and water. Heat over medium heat until the sugar dissolves.
- Increase the heat to medium-high and cook without stirring until the mixture turns into a deep amber caramel color.
- Pour the caramel into the prepared cake pan, tilting it to evenly coat the bottom.
- Let the caramel cool and set for a few minutes.
- Meanwhile, slice the blood oranges into thin rounds, removing any seeds.
- Arrange the blood orange slices over the caramel in a single layer, covering the entire bottom of the pan.
- Prepare the cake batter:
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, followed by the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
- Carefully spread the cake batter over the blood orange slices in the cake pan, smoothing the top.
- Bake the cake in the preheated oven for about 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and let it cool in the pan for 5-10 minutes.
- Place a serving plate upside down on top of the cake pan and carefully invert the cake onto the plate. Gently lift the pan off the cake, revealing the caramelized blood oranges on top.
- Allow the cake to cool completely before serving. You can serve it as is or garnish with whipped cream, powdered sugar, or additional blood orange slices.
