Ingredients:
- 450 grams fresh broccoli florets
- 2-3 cloves of garlic, minced
- 2 tablespoons olive oil
- Zest of 1 lemon
- Juice of half a lemon
- 1/4 cup grated Parmesan cheese
- Salt and black pepper, to taste
- Red pepper flakes (optional, for a little heat)
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat the Oven: Preheat your oven to 425°F (220°C).
- Season the Broccoli: In a large bowl, toss the broccoli florets with olive oil, minced garlic, lemon zest, lemon juice, salt, black pepper, and a pinch of red pepper flakes if you like a little heat. Make sure the broccoli is well coated with the seasonings.
- Roast the Broccoli: Spread the seasoned broccoli evenly on a baking sheet lined with baking paper or a silicone baking mat. Make sure the broccoli pieces are not overcrowded; they should have some space between them to roast properly.
- Roast in the Oven: Place the baking sheet in the preheated oven and roast for about 20-25 minutes or until the broccoli is tender and the edges start to crisp up. Be sure to check on it after 15 minutes and give it a gentle stir for even roasting.
- Add Parmesan Cheese: Remove the roasted broccoli from the oven and immediately sprinkle the grated Parmesan cheese evenly over the top while it's still hot. The residual heat will melt the cheese slightly and help it adhere to the broccoli.
- Serve: Transfer the roasted broccoli with garlic, lemon, and Parmesan cheese to a serving dish, garnish with freshly chopped parsley, and serve hot.
