Ingredients:
For the Salad:
- 1 cup quinoa, rinsed and cooked according to package instructions
- 1 cup red crimson grapes, halved
- 1 cucumber, diced
- 1/2 cup crumbled feta cheese
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh mint leaves, chopped
For the Dressing:
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon honey
- Salt and pepper to taste
Instructions:
- Cook Quinoa: Rinse the quinoa under cold water and cook it according to the package instructions. Once cooked, let it cool to room temperature.
- Prepare Ingredients: While the quinoa is cooling, prepare the rest of the salad ingredients. Halve the grapes, dice the cucumber, chop the red onion, crumble the feta cheese, and chop the mint leaves.
