Method
- In a large frying pan, heat oil over medium heat, add butter, and swirl around the pan. When butter foams, add mushrooms, crushed garlic, and thyme, and season with salt. Cook for 3 minutes, tossing regularly until mushrooms are tender. Add lemon juice and toss to coat.
- Lightly brush the cut side of sourdough with extra olive oil. Grill on the oiled side for 2 minutes or until charred.
- Spread goat’s cheese over the charred side of sourdough and top with mushroom mixture. Top with parmesan and season with salt and pepper.
