Ingredients
- 6 to 8 medium corns
- ½ cup sour cream
- ½ cup mayonnaise
- ½ cup chopped coriander
- 1 garlic clove, minced
- ¼ teaspoon smoked paprika
- 2 tsp grated lemon zest
- 2 tbsp lime juice
- ½ cup parmesan cheese, grated
Method
- In a small bowl, whisk together sour cream, mayonnaise, coriander, paprika, lime zest and juice. Set aside.
- To grill the corn, place it directly onto grill grates or barbecue. Grill the corn for 3 minutes until they look charred. Turn and repeat.
- Using a brush or spoon, coat each corn with the cream mixture. Sprinkle parmesan cheese on top. Serve immediately with lime wedges.
