Ingredients:
- 1 kg ripe tomatoes, chopped
- 2 large onions, finely chopped
- 2 apples, peeled, cored, and chopped
- 1 cup raisins
- 1 cup brown sugar
- 1 1/2 cups apple cider vinegar
- 1 teaspoon ground ginger
- 1 teaspoon mustard powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional, for heat)
- Olive oil for cooking
Instructions:
- Heat a tablespoon of olive oil in a large saucepan over medium heat.
- Add the chopped onions and cook until they become soft and translucent.
- Add the chopped tomatoes, apples, raisins, and brown sugar to the pan. Stir well.
- Pour in the apple cider vinegar and stir again.
- Add ground ginger, mustard seeds, ground cinnamon, ground allspice, salt, black pepper, and cayenne pepper (if using). Mix everything thoroughly.
- Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer uncovered. Stir occasionally.
- Simmer the chutney for about 1 to 1.5 hours, or until it thickens to your desired consistency. Stir occasionally to prevent sticking.
- Taste the chutney and adjust the seasoning if needed. Add more sugar or vinegar according to your taste preference.
- Once the chutney has thickened, remove it from the heat.
- Transfer the chutney into sterilized jars and seal them. Store the jars in a cool, dark place.
