This quiche was created to celebrate the coronation of King Charles III.
King Charles Coronation Quiche
Ingredients:
For the Pastry:
- 1 Sheet Frozen Shortcrust Pastry
For the Filling:
- 1/2 cup (120ml) milk
- 3/4 cup (180ml) heavy cream
- 2 large eggs
- 1 tablespoon fresh tarragon, chopped
- Salt and pepper to taste
- 1 cup (100g) grated cheddar cheese
- 1/2 cup cooked spinach, chopped and well-drained
- 1/2 cup cooked broad beans (or soy beans), peeled if desired
Instructions:
- Pastry
- Preheat your oven to 350°F (175°C).
- Grease a 9-inch (23 cm) tart pan or pie dish then press the pastry into the pan, trimming any excess.
- Line the crust with bakingt paper and fill with pie weights or dried beans or rice.
- Bake for 15 minutes, then remove the weights and parchment paper.
- Bake for an additional 10 minutes, or until the crust is lightly golden. Let it cool slightly.
- Prepare the Filling:
- In a medium bowl, whisk together the milk, heavy cream, and eggs.
- Stir in the chopped tarragon, and season with salt and pepper to taste.
- Spread the grated cheddar cheese evenly over the baked crust.
- Distribute the chopped spinach and broad beans over the cheese.
- Assemble the Quiche:
- Pour the egg and cream mixture over the vegetables and cheese in the crust.
- Make sure the filling is evenly distributed.
- Bake the Quiche:
- Bake the quiche for 25-30 minutes, or until the filling is set and the top is lightly golden.
- Allow the quiche to cool for a few minutes before slicing.
- Serve:
- Serve the quiche warm or at room temperature, garnished with additional fresh tarragon if desired.
