4 Large Desiree Potatoes, peeled and roughly chopped
4 cups chopped cabbage
1 onion, chopped
1 cup milk
1/2 cup butter
6 rashers bacon, cooked and chopped
4 spring onions
Place the potatoes in a large pan of water and bring to the boil, then simmer until tender.
While potatoes are cooking, melt2tblsp butter in a large frypan, add chopped onion and cook until tender. Add cabbage & cook until tender and browned on the edges.
Mash the potato with the remaining butter and gradually add the milk until you reach your desired consistency. Season with Salt & Pepper.
Fold cabbage, 1/2 the bacon & spring onion into the mash potatoes.
Transfer to a serving dish and sprinkle with remaining bacon.
Serve hot with corned silverside or your favourite protein
