Ingredients:
- 2 large tomatoes, diced
- 1 cucumber, diced
- 1 red onion, thinly sliced
- 1 green bell pepper, diced
- 1/2 cup Kalamata olives, pitted
- 1/2 cup crumbled feta cheese, Greek or Smooth *
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Optional: 1/4 cup chopped fresh parsley for garnish
Instructions:
- Start by preparing the vegetables. Dice the tomatoes and cucumber, thinly slice the red onion, and dice the green bell pepper. Place them all in a large salad bowl.
- Add the Kalamata olives to the bowl. If they're not already pitted, make sure to remove the pits.
- Crumble the feta cheese over the top of the vegetables in the bowl.
- In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and pepper to make the dressing.
- Pour the dressing over the salad ingredients in the bowl.
- Gently toss the salad to combine all the ingredients and coat them evenly with the dressing.
- Taste the salad and adjust the seasoning if necessary.
- Optional: Garnish the salad with chopped fresh parsley for an extra burst of flavor and color.
- Serve immediately as a side dish or as a light main course.
Feel free to customize it with additional ingredients such as Grilled Haloumi Cheese, cherry tomatoes, or even grilled chicken or salami for added protein.
* Either Greek or Smooth Fetta can be used, it just depends on your preference for taste & texture.
