450g fresh cherries, pitted
1 cup (240ml) whole milk
3 large eggs
1/2 cup (100g) granulated sugar
1 teaspoon vanilla extract
1/8 teaspoon salt
1/2 cup (65g) all-purpose flour
Icing sugar, for dusting (optional)
Instructions:
- Preheat your oven to 350°F (180°C). Grease a baking dish (about 9 inches in diameter) with butter.
- Wash and pit the cherries. If you don't have a cherry pitter, you can carefully cut them in half and remove the pits.
- Spread the pitted cherries evenly in the greased baking dish
- In a blender or with a hand mixer, combine the milk, eggs, sugar, vanilla extract, and salt. Blend until well combined.
- Add the flour to the wet ingredients and blend until you have a smooth batter. Let the batter rest for about 10 minutes to allow the flour to fully absorb the liquid.
- Pour the batter over the cherries in the baking dish.
- Bake in the preheated oven for 40-45 minutes or until the clafoutis is set and golden brown on top. A toothpick inserted into the center should come out clean.
- Allow the clafoutis to cool for a bit before serving. It can be served warm or at room temperature. Dust with powdered sugar before serving if desired.
