Ingredients
- 1 Bunch Radishes, thinly sliced
- 1 x 400g can Butter Beans , rinsed
- 3 handfuls Lettuce Leaves /Rocket
- 1 Cucumber, sliced
- 1 Spring Onion, sliced
- 1/3 cup Parsley, roughly chopped
- 2 tbsp Parmesan, shaved
- 1 tbsp Mixed Seeds ( we used pumpkin, hemp, sunflower)
- FOR THE DRESSING
- ½ Lemon, juiced
- 2 tbs p Extra Virgin Olive Oil
- 1 tsp Honey
Method
1: Combine the dressing ingredients in a bowl and set aside.
2:Combine all remaining ingredients in a salad bowl.
3: Drizzle salad with dressing upon serving
